Pectin is a plant-derived polysaccharide, an important element in the life of plants  that allows fruits and vegetables to resist drought and stay fresh  for a long time without preservatives. Due to such property as viscosity, pectins have been widely used as thickeners in the medical, pharmaceutical and food industries. The main source of pectins is apples and citrus fruits.
